Even as Americans have been gaining weight, they have cut their average fat intake from 36 to 34 percent of their total diets in the past 15 years. And indeed, cutting fat to control or lose weight makes sense. Fat has nine calories per gram. Protein and carbohydrates（碳水化合物） have just four. The calories from fat just do it a little quicker. A Wisconsin computer programmer who decided with a diet coach to eat only 40 grams of fat a day learned the lesson firsthand. He wasn’t losing weight. Then he showed his food diary to his coach and revealed he’d been eating half a pound of jelly beans a day. “They don’t have any fat,” he explains. But they had enough sugar to keep him from shedding an ounce. ?
Nonfat foods become add-on foods. When we add them to our diet, we actually increase the number of calories we eat per day and gain weight. That was borne out in a Pennsylvania State University study. For breakfast, Prof. Barbara Rolls gave two groups of women yogurt（酵母乳） that contained exactly the same amount of calories. One group’s yogurt label said “high fat”—the other, “low fat.” The “low fat” yogurt group ate significantly more calories later in the day than the other group. “People think they’ve saved fat and can indulge themselves later in the day with no adverse consequences,” says Richard Mattes, a nutrition researcher at Purdue University. “But when they do that, they don’t compensate very precisely, and they often end up overdoing it.”

When my friend and I (two ladies of a certain age) go out to have a meal, she always leaves an extremely large tip. At times, the tip will equal the amount of one of the main dishes—sometimes it comes to about 30 per cent of the bill. I feel 15—20 per cent is adequate for services offered and depending on the type of restaurant. At a cafe I would like to leave 15 per cent or a bit more depending on the service and etc. A larger tip would be appropriate if we are in a big city or a nicer place. My friend says “Well, I am sure they are not driving a Mercedes (奔驰汽车).” Well, neither am I, and how does she know? Who is correct and how can I make changes? I might add I do truly feel tipping should be based on good service, and also if you frequent a place and know the staff a larger tip is OK. I would never hesitate to tip a waitperson. I always leave to the higher side.

Americans are more generous tippers than the British. I suspect that 10 per cent for a tip is about normal in the UK. Tipping is a strange survival in our age of supposed equality and minimum wages. Your friend has a generous nature and deep purse. I do not see why you cannot let her tip whatever she wants, and do your own thing. I agree that a tip should be a reward for good service and general good feeling. If the service is rotten and the meal a disaster, we should withhold a tip and explain why we are doing so. Few of us have the chutzpah (厚颜) to do this. Sensible restaurants have a box for tips, so that they are shared out among the staff, including those in the kitchens whom we do not see. (I trust that the management does not receive the money as extra profit.) I look forward to the day when waiters and other servants are paid a good enough living wage, so that they do not have to depend on the generosity of strangers to survive. To wait at table is just as honorable a way to earn a living in this wicked world. If you are pleased with the meal and cheerful service, you should tip as handsomely as your purse affords. I don’t suppose that your waiter / waitress is driving a Mercedes, even in the States.

Twenty-six years after a terrible bicycle accident left her comatose（昏迷） for two months and with permanent brain injuries, Barbara Buchan, performs many actions more slowly than others. But on September 10 in Beijing, Buchan, at 52, the oldest member of the United States Paralympic team, broke the record and won the gold medal for her disability class in the individual 3,000-meter cycling pursuit.

She was wearing only a soft leather helmet at the time; her accident made the rule put into practice that cyclists wear the hard-shell helmets that are now common.
Buchan recovered enough of her athletic ability to run track in the 1988 Paralympics in Seoul, where she won a silver medal in the 800 meters. Women’s cycling was not included in the Paralympics yet, so Buchan trained to the point where she raced against men in the 2000 Paralympics in Sydney, Australia — she finished 9th and 10th in two races — and then successfully fought for a separate women’s cycling program beginning in 2004 in Athens, where she did not get a medal.
Even though she was approaching her 50s, Buchan kept racing and again made the United States Paralympic team for Beijing — where she is twice the age of most of her teammates and competitors.
“Barbara’s almost the leader of our team — she’s been through it all,” said Craig Griffin, the United States cycling coach. “She’s never retired. She’s never let her body go and then come back. I don’t think age is as big of a deal as people make it out to be.”
