More than half of the world’s books and three quarters of international mails are in English. Of all languages, English has the largest vocabulary - perhaps as many as two million words.

   However, let’s face it: English is a crazy language. There is no egg in an eggplant, neither pine nor apple in a pineapple and no ham in a hamburger. Sweet-meats are candy, while sweetbreads, which aren’t sweet, are meat.

   We take English for granted. But when we explore its paradoxes (探讨它的矛盾), we find that quicksand can work slowly, boxing rings are square, public bathrooms have no baths in them.

   And why is it that a writer writes, but fingers don’t fing, grocers don’t groce, and hammers don’t ham? If the plural (复数) of tooth is teeth, shouldn’t the plural of booth be beeth? One goose, two geese - so one moose, two meese?

   How can a slim chance and a fat chance be the same, while a wise man and a wise guy are opposites(相反)? How can overlook and oversee be opposites, while quite a lot and quite a few are alike? How can the weather be hot as hell one day and cold as hell the next?

   English was invented by people, not computers, and it reflects (反映) the creativity of human beings. That’s why, when stars are out, they are visible (能看见的); but when the lights are out, they are invisible. And why, when I wind up my watch, I start it; but when I wind up this essay, I end it.

  Most of the demand is being fed by household suppliers, and California’s mega-dairies (大制酪场) are growing so fast that experts expect the state to overtake Wisconsin in cheese production within two years. California is already the nation’s leading milk producer, and with the help of cheese makers like Hilmar Cheese Company-the largest in North America-the state has doubled its cheese production in the last ten years.

  In 1995, California made 70 varieties of cheese. Now there are 250 types of cheese coming out of the state. One in every 10 pounds of cheese eaten is a higher-quality, value-added cheese. Ten years ago, only one in 15 pounds of cheese eaten was a specialty. Most of it is common cheese, but Americans are also eating much more cheese.

   It is good news for California’s dairies (牛奶场). By pooling their resources, farmers could turn some of the high-protein, high-fat milk coming from their brown cows into cheese, a value-added product that would bring in a little extra cash. When they started the Hilmar Cheese Company in 1984, the 12 families together brought in 250,000 pounds of milk a day-a drop in a bucket for a company that now processes (加工) 10 million pounds of milk a day from more than 270 producers-about 10 percent of all the milk produced in California.

   Cheese has great healthful value, and brings calcium (钙) back into diets. But it also makes food taste better, making it easier to eat too much. “It’s terrible that we’re eating more cheese, but bottom line, all calories count,” said Stern, who also suggests people should try to eat cheese in different ways, with pears or apple slices-expanding their diets.
