“People should have one meat-free day a week if they want to make a personal and effective sacrifice that would help deal with climate change,” the world’s leading authority on global warming has told The Observer.
Dr Rajendra Pachauri, chair of the United Nations Intergovernmental Panel on Climate Change, said that people should then go on to reduce their meat consumption even further.
Pachauri, who was re-elected the panel’s chairman for a second six-year term last week, said diet change was important because of the huge greenhouse gas emissions (排放) and other environmental problems associated with raising cattle and other animals. “It was relatively easy to change eating habits compared to changing means of transport,” he said.
The UN’s Food and Agriculture Organisation has estimated that meat production accounts for nearly a fifth of global greenhouse gas emissions. These are produced during the production. For example, ruminants (反刍动物), particularly cows, give off a gas called methane, which is 23 times more effective as a global warming agent than CO2.
Pachauri can expect some opposite responses from the food industry to his advice, though last night he was given unexpected support by Masterchef presenter and restaurateur John Torode. “I have a little bit and enjoy it,” said Torode. “Too much for any person is bad. But there’s a bigger issue here: where the meat comes from. If we all bought British and stopped buying imported food, we’d save a huge amount of carbon emissions.”
Professor Robert Watson, the chief scientific adviser for the Department for Environment Food and Rural Affairs, said government could help educate people about the benefits of eating less meat, but it should not regulate. “Eating less meat would help, there’s no question about that,” Watson said.
However, Chris Lamb, head of marketing for pig industry group BPEX, said the meat industry had been unfairly targeted and was working hard to find out which activities had the biggest environmental impact and reduce them. “Some ideas were contradictory,” he said. “For example, one solution to emissions from cattle and other animals was to keep them indoors, but this would damage animal welfare. Climate change is a very young science and our view is there are a lot of simple solutions being proposed.”

To get an extra 14 years of life, don’t smoke, eat lots of fruits and vegetables, exercise regularly and drink alcohol in a proper amount.That is according to a study published this Monday in the Public Library of Science Medicine Journal.
After tracking more than 20,000 people aged 45 to 79 years in the United Kingdom from about 1993 to 2007, Kay-Tee Khaw of the University of Cambridge and his colleagues found that people who adopted these four healthy habits lived all average of 14 years longer than those who didn’t.
“We’ve known for a long time that these behaviors are good things to do, but we’ve not seen this benefit before, ”said Susan Jebb, head of Nutrition and Health at Britain’s Medical Research Council.“The benefit was also seen regardless of whether or not people were fat and what social class they came from.”
Study participants(参与者)scored a point each for not smoking, regular physical activity, eating five servings of fruits and vegetables a day and moderate alcohol intake.
Public health experts said they hoped the study would inspire governments to introduce policies helping people to adopt these changes.But because the study only observed people rather than testing specific changes, it would be impossible to conclude that people who suddenly adopted these healthy behaviors would surely gain 14 years.
“We can’t say that any person could gain 14 years by doing these things, ”said Dr.Tim Armstrong, a physical activity expert at the World Health Organization.“The 14 years is an average across the population of what’s theoretically(理论上地)possible.”
“Most people know that things like a good diet matter and that smoking isn’t good for them, ”Susan Jebb said.“We need to work on providing people with much more practical support to help them change.”

Fast food and too much TV time should not take all the blame for the weight problems. A group of researchers say that a number of aspects of modern living from lack of sleep to environmental chemicals and to living with air conditioning ——may be closely related to the weight problems of many people.
Lack of sleep is one of factors. Research in animals and humans suggest that a lack of sleep over a long time can increase appetite. Studies also show that many adults and children are sleeping less than they used to. In recent decades, adults have gone from sleeping for all average of nine hours to about seven hours.
There is also evidence that industrial chemicals may increase body fat. These chemicals, which are used in products, change hormonal activity when they get into the body. Studies suggest that people have been getting more and more of these chemicals through the food chain in recent decades.
Another factor that may be making people overweight is air conditioning . The body burns calories when forced to eat less in hot and wet weather, but air conditioning makes it unnecessary for the body to make any adjustment.
Researchers also list other possible risk factors for overweight , including more older mothers, whose children may become overweight more easily; a number of medicines which can lead to weight gain ; and fewer people who smoke, since people often gain weight when they stop smoking because nicotine can make people eat less.
No one is suggesting that people should stop working and sleep more, or keep smoking. When it comes to any person's weight, what really matters is how much they eat and how much of the food they use every day. That means diet and exercise are still the key.
